It needs the two cameras on a the 7 Plus to mimic the narrow depth of filed you get with a large aperture lens on a big sensor so previous models and even the standard 7 can't do it.

It's not perfect, but a very good effort, still some way to go with software before we can ditch the proper camera.

If we're being pedantic the iPhone 7 Plus has three cameras. 

There is the usual front facing FaceTime HD Camera which in this case has a 7MP 1080p sensor and a f2.2 lens.
Where the 7 Plus differs from other iPhones and most phones in general is that it has two (completely separate) rear facing cameras. Both have 12mp 4k sensors with one camera sporting a 28mm (equivalent) f1.8 optical image stabilised lens while the other camera has a 56mm f2.8 lens.

Ah - so when the phone is deciding whether to digitally zoom the 28mm or use 56mm, it's actually deciding between two CAMERAS rather than two LENSES? Interesting...

It is changing between two entire camera each with its own lens. There is a (virtual) switch in the camera app that lets you flip between the two so you can shoot with either the more typical wide one which has the brighter aperture or the longer one. Both cameras have a 12mp/4k sensor, each running independent of the other hence the ability of the software to run both of them at the same time when you switch to Portrait Mode and fake a narrow depth of field.

You can see here the difference between the iPhone 7 and the 7 Plus:
