READY FOR THE FISH

On the occassional Friday we still stick to the Fish for dinner tradition..............one of our favourite methods is to lay peices of white fish fillet on to a bed of roasted (grilled realy) chopped mixed peppers.

The fish is then topped with a thick layer of Mayonaise then a coating of almost any fancy Bread Crumb and Herb Stuffing (Waitrose has a good selection) ...the fish is then baked until done.

Fantastic with a few French Fries and Pease. :yes

Here's my sauce that goes with most fish :

 

- chop a couple of large cloves of garlic really fine 

- chop a mini-pepper really fine 

- sautée lightly in walnut oil

- when just browning (garlic), add a couple of teaspoons of fish sauce

- squeeze in half a lime

add water to taste and simmer for up to an hour. Pour over cooked fish. :) 

 

(Caution - don't add salt, the fish sauce is salt enough!!)
